Use a large wart volume to keep the sugar from carmelizing to keep the color light.
At bottling/kegging add peach extract to beer and flavor to taste. Its easy to add more, but hard to remove it so add slowly! Adding too much extract will give the beer a chemically taste which is quite unpleasent, but will mellow with ageing.
